Foamy Margaritas

Today we are going to show you our favorite way to dress a Margarita. Creating salt foam to top a Margarita proves to be a more subtle way to deliver the signature salty bite than the traditional salt rim. This is a really cool, easy way to dress Margaritas that will wow your friends and change the way you look at this favorite of Mexican cocktails.  Salud!

Salt Foam

  • 1/2 cup fresh squeezed lime juice
  • 1 cups water
  • 1/2 tablespoon kosher salt
  • ¼ cup pasteurized egg whites (found by the eggs at your grocers)

Put all the ingredients in a glass bowl and with a hand mixer whip everything till it creates soft peaked foam.  Shake your favorite Margarita recipe and strain into a cocktail Saucer or any “up”glass.  Spoon the salt foam and gently lay it over the top of the drink.  The mix will keep refrigerated for 24 hours and you can repeat the process over and over by re-mixing it should the foam dissipate.
