Admittedly, we’ve been waiting on this one for a while. Glass shortages & supply chain disruptions have made this one about 2 months late. But in the instance of our latest Starlight Single Barrel pick, late is far better than never!
For those new to Starlight Distillery, this is one of the hottest producers in the whiskey world right now. The Huber Family brain trust has been in the adult beverage business dating back 7 generations. Whether it’s distilled or fermented, the Huber’s have successfully passed down a passion for agriculture and alcohol from Father to Son. Humble beginnings and a transcendent dedication to hard work has led to every new member of the Family working to out do those before them.
Father Ted Huber is joined his two sons Christian & Blake and all three are true masterminds. Their combined efforts result in an approach both scientific in it’s method yet driven by artisanal outcomes. Resulting distillates range in style, weight, texture yet all carry the Starlight Signature of remarkable complexity. Both Christian and Blake did their Senior Thesis’ on Oak aging if that gives you any indication of the level of genuine love and know how this Family possesses.
Our Barrel pick had us sampling through a variety of mashbills, toast levels and cooperages – yet our collective decision landed squarely on a unique Double Oaked Bourbon featuring a second passage through barrels from ZAK Cooperage (a long time supplier to Knob Creek).
This pours a beautiful mahogany color with a wide aroma set featuring vanilla, sweet apples and pears, a touch of red cherry fruit. Layes of salted caramel and toffee emerge with air with a veil of baking spices. The palate is supple and viscous winding into a dry finish with a gentle push of spice.
Bottled at 110.6 Proof … this is a blend of 3 grain and 4 grain whiskey, blended together and finished in a Zak barrel for 7 months. The 3 grain is 60% Corn, 20% Rye, 20% Barley. The 4 grain is 51% Corn, 20% Rye, 20% Barley and 9% Wheat. The Zak Barrel is medium toast with a char level of 3.
