Today’s clever cocktail is inspired by the Bartlett pear. Fall is pear season, and this wonderful tree fruit takes to bakery spices and rum like a duck to water. The Spiced Bartlett Bombo cocktail is an original from the Bottle Pros cocktail kitchen and is perfect for fall sipping when it is still too warm for a toddy but just cool enough for something rich and subtly warming. The spiced pear syrup takes a bit of preparation, but the effort is well worth the rewards. Cheers!
Spiced Bartlett Bombo
In a shaker glass filled with ice add:
- 2 Ounces Well-Bred Barbados Gold Rum (We used Mt Gay)
- 1 Ounce Spiced Bartlett Pear Syrup
- ½ Ounce Fresh Squeezed Orange Juice
- ½ Ounce Fresh Squeezed Lemon Juice
Shake and strain into a stemmed cocktail coupe. Dust lightly with nutmeg and garnish with a pear slice.
Spiced Pear Syrup
Ingredients
- 2 Large Ripe Bartlett Pears Cored & Chopped (no need to peel)
- 1 Cup Water
- 1 Cup Light Brown Sugar
- 1 Cinnamon Stick
- 3 whole allspice berries (crushed)
- 1 star anise pod
In a medium saucepan add water & light brown sugar, bring to a boil. Add pears, cinnamon stick, allspice berries & star anise pod. Reduce heat and simmer until reduced by 1/3. Allow to cool then strain through a fine sieve discarding solids. Store refrigerated in a sterile glass bottle (will keep 7-10 days).
