As the weather moderates it is time to enjoy spring. Today’s clever cocktail is a spring take on the French 75. It has a base of gin and employs chamomile honey syrup for an herbal accent. Topped with sparkling wine, it is a festive and refreshing concoction. Cheers!
Chamomile 75
In a shaker glass filled with ice add:
- 1 Ounce London Dry Gin
- 1 Ounce Chamomile Honey Syrup
- ½ Ounce Fresh Squeezed Lemon Juice
Shake and strain into a large cocktail saucer (6 oz capacity). Top with 2 ounces chilled sparkling wine. Garnish with a twist of lemon.
Chamomile Honey Syrup
In a medium saucepan:
Bring 2 cups of water to a boil. Add 3 ounces of honey and stir to dissolve. Remove from heat and add 4 Chamomile teabags to steep. Remove teabag, pour in a sterile glass bottle, chill. Will keep in the refrigerator for 2-3 days.
