Spring has sprung and we are ready to use some of the season’s first harvests to craft this week’s Clever Cocktail. Rhubarb and Strawberries go together wonderfully in cocktails and today we have created a take on the “Spritz” using these two spring favorites. It is a refreshing, slightly bitter, slightly sweet cocktail perfect for the season.
Strawberry ~ Rhubarb Spritz
In a large red wine glass filled with ice add:
- 1 ½ ounces of Aperol
- 1 Ounce Strawberry~Rhubarb Syrup
- ½ Ounce Fresh Lemon Juice
Top with Club Soda, stir to mix. Garnish with a Fresh Strawberry and/or Small Stick of Rhubarb
Strawberry-Rhurbarb Syrup
- ½ Cup Sugar
- 1 Cup Water
- 1 Cup Chopped Rhubarb
- 1 Cup Fresh Hulled Strawberries
Bring Water to a Boil. Add Sugar Until Well Dissolved. Add Strawberries and Rhubarb, Reduce Heat and Simmer for 30 Minutes. Strain and Cool. Will Keep Refrigerated for About a Week.
