Evening in Kingston

We came across this recipe created by Rob Wiley in Bon Appetite magazine. It is a tall twist on the Negroni, and loosely related to a Champagne cocktail. The base for the drink is mixed up as a batch recipe making it easy to execute when you don’t feel like being stuck behind the bar. Premix the base, chill it down cold and then just pour it over ice and top with Champagne. Easy to make, great drinking. This may be a good one to ring in the New Year. Cheers!

Evening in Kingston

In a small pitcher or bottle add:

  • 1½ cups Amber Rum (we like Plantation 5 year)
  • 1 cup Campari
  • 1 cup Sweet Vermouth (Dolin will do)

Stir, cover and put in the refrigerator for at least 2 hours before using and up to a day.

In a tall Collins glass filled with ice add:

  • 2 Ounces of Rum/Campari/Vermouth mixture
  • Top with sparkling wine

Garnish with an orange twist.
