Ginger Rum Shrub

If you are a fan of the Dark and Stormy cocktail, then you will love the Ginger Rum Shrub. It comes from colonial recipe for a ginger syrup made with sugar, ginger and vinegar better known as a “Shrub”. While this recipe takes a bit of work in the kitchen, the rewards are well worth the effort.  The ginger shrub syrup has an intense spicy/tart ginger flavor that regular ginger beer just can’t rival. It is excellent when mixed with any dark rum or even as a virgin drink alone with club soda. We love the cocktail made with Cruzan Black Strap rum. It is an amazing base for this drink providing a rich caramel and molasses flavor with a subtle smokiness that marries beautifully to the Shrub.

Ginger Shrub Syrup

  • 2 cups water
    2 cups demerara sugar ( if not demerara then 3 cups white and 1 cup brown)
    1 cups chopped peeled ginger root (use a food processor )
    1 cups apple cider vinegar (non-distilled)

Technique
Put sugar in water and boil until sugar is dissolved
Add chopped ginger and simmer covered for 30 minutes
Add vinegar and bring to a boil
Boil for 15 minutes or until reduced by 1/2
Cool and strain syrup (pressing out the ginger)
Will keep refrigerated for a month

In a Highball Glass Packed with Cracked Ice Add

  • 2 Ounces of Dark Rum (We Love Cruzan Blackstrap)
  • 1 Ounce Ginger Shrub

Top with Club Soda, Garnish with a Wedge of Lime … Enjoy!
