With Saint Patrick’s Day right around the corner we thought it best to offer up a cocktail with a base of Irish Whiskey. After exhaustive internet cocktail surfing and more than a few trials that went south, we landed on The Declaration. This drink was created by Erza Star at Drink in Boston. The Declaration is an impeccably balanced assemblage of ingredients and a most worthy cocktail to offer those on Saint Pat’s.
- 1 1/2 oz. Irish whiskey (we used Red Breast 12)
- 1/2 oz. honey simple syrup*
- 3/4 oz. Noilly Pratt dry vermouth
- 1 barspoon lemon juice
- 1 dash Angostura bitters
- 2 dashes Angostura Orange bitters
Stir with ice and strain into a chilled cocktail glass. Garnish with an orange twist.
*Honey Simple Syrup
- ½ Cup Honey
- ½ Water
Bring to a Boil then Shut Heat Off. Cool and Bottle in a Sterile Container. Refrigerated Syrup Should Keep a Week.
