Some cocktail creations are simple variations on the classics. The addition of a single flavor can change the dynamics of a drink and lift it to new heights. Today’s Clever Cocktail comes to us by way of a wine tasting experiment gone badly, and a bottle of Pomegranate Molasses that needed a home. Pomegranate Molasses are thick and tart with a very moderate amount of sweetness and an earthy character that is quite appealing. In researching how I could use the molasses in a cocktail I came across a simple variation on the Manhattan from David Solmonson the author of The 12 Bottle Bar. The drink’s beauty is in its simplicity making this a welcome new addition to our repertoire of cocktail recipes.
