Necessity is the Mother of Cocktail Invention. Looking into a bowl of Plums that have gone slightly past their eating prime we decided to save them by making a Plum syrup. Simple enough process.
Plum Syrup
- 1 Cup White Sugar
- 1 Cup Water
- 6 Over-Ripe Plums Pitted and Diced (Skin On)
In a Medium Saucepan Add Water and Bring to a Boil
Add Sugar and Stir to Dissolve
Add Diced Plums, Reduce Heat and Simmer for 30 Minutes
Strain Syrup Through a Fine Sieve, Pressing Out the Plum Pulp
Cool and Store in a Sterile Glass Container (Will Keep for 7-10 Days in the Fridge)
With this syrup we crafted a Plum Daquiri of sorts. The resulting cocktail is quite delicious with a nice citrus bite balanced by the fatter, lush characters of the plum. The recipe is as follows:
Rum & Plum Cocktail
In a Cocktail Shaker Filled with Ice Add:
- 1 ½ Ounces of Gold Rum (Don’t Skimp on Quality, We Used Plantation 5 Year)
- 1 Ounce Plum Syrup
- The Juice of 1 Lime
Shake Like Crazy.
Strain into a Rocks Glass Filled with Crushed Ice.
Top with a Slash of Club Soda.
Garnish with a Lime.
