Last week, Pineapples were on sale at our local grocery. Pineapple is great when mixed with spirits and is perfect for summer cocktails. Below we offer you a recipe for home-made Pineapple syrup. It is a mixer that marries equally well to Rum, Rye Whiskey, Gin and Vodka. We enjoyed it with Dark Rum over shaved ice and offer you this recipe today. Make yourself a batch of this great summer cocktail syrup and experiment for yourself.
Pineapple Cocktail Syrup
- 1 Cup Granulated White Sugar
- 1 Cup Water
- 1 Whole Pineapple
Peel and Core the Pineapple. Put in a Food Processor and Puree. In a Medium Sized Saucepan Bring Water & Sugar to a Boil. Add Pureed Pineapple and Simmer on Low Heat for 30 Minutes or Until Reduced by 1/3. Strain Pineapple Syrup Through a Fine Sieve Reserving the Liquid (Pressing Out the Pulp). Store Refrigerated (Will Keep for 7 to 10 Days).
Rum Pineapple Mist* Cocktail
- 2 Ounces Dark Jamaican Rum
- ½ to 1 ounce Pineapple Syrup
Pack finely shaved ice into a Short Tumbler (Oversized Rocks Glass). Stir in 2 Ounces of Dark Jamaican Rum (we like Plantation’s Original Dark). Stir in ½ to 1 Ounce of Pineapple Syrup to Taste. Top with a Splash of Club Soda. Garnish with a Pineapple Wedge.
This drink is strong and sweet at the same time. We prefer less Pineapple syrup, using it only to accent the rum as vermouth would accent the whiskey in a Manhattan.
